a fancy toast for leftovers

This toast has one purpose: to breathe new life into leftover vegetables whether it’s roasted carrots or sauteed greens. Use cold or ambient-temperature leftovers to avoid the excess water and mushiness that come with reheating cooked produce. 

yield ~8 toasts

creamy base
8 oz whole milk ricotta or mascarpone cheese
1/4 cup whole milk greek yogurt
1-2 ts honey

for assembly
crusty bread, sliced & toasted with olive oil
leftover roasted or sautéed vegetables
parsley, mint or dill leaves (optional)
lemon, cut into wedges (optional)


recipe prep

In a medium bowl, combine cheese, yogurt, 1 teaspoon honey and 1/2 teaspoon diamond crystal kosher salt (1/4 teaspoon if morton’s) and stir until evenly mixed and a little fluffy. Taste, and add more honey and salt as needed.

Dollop cheese mixture onto the toast as desired and spread in an even layer. Top with vegetables and garnish with herbs, if using. If you want, squeeze a little lemon juice on there before serving.
